Industry-first IH Ebisen (Shrimp Cracker) Baking Machine Developed
- Better quality with faster warm-up time -

Chubu Electric announces the development of the IH Ebisen Yakiki, the industry's first manual ebisen (shrimp cracker)*1 baking appliance to use induction heating.


Older types of ebisen baking appliances have needed improving because the machinery took so long to warm up and the temperature of the baking surface was so uneven.

The new appliance heats with an IH coil in place of the nichrome wire of older baking machines, resulting in a 70% faster warm-up time.

The IH coil is packed more densely on the appliance's perimeter, where heat is easily lost, so the baking surface has a more uniform temperature all over. The result is evenly baked crackers with better quality.


*1 Ebisen shrimp crackers:
A popular snack made primarily around Mikawa Bay and the Chita Peninsula of Aichi Prefecture and Ise Bay of Mie Prefecture. Potato starch is kneaded into shrimp paste on a cast-metal plate and the dough is pressed into a cracker shape and baked


The new ebisen baking appliance can also be used for other types of traditional snack crackers, including those with squid or octopus. This appliance will help spur demand for electric power.

Manufacture and sale of the appliance will commence in April 2007 through Mitori Sangyo (President: Seiji Torii; Address: 11 Aza Yashikiwari, Oaza Ajihama, Isshiki-cho, Hazu-gun, Aichi Prefecture) and Yoshida Kogyo (President: Masanobu Yoshida; Address: 99-2 Aza Katada, Oaza Sanbongi, Oharu-cho, Ama-gun, Aichi Prefecture).
